Key Lime Pie
September 19, 2024

Recipe:
For the pie crust:
1 cup + 1/2 cup Simple Mills Honey Cinnamon Sweet Thins OR any other gluten free graham crackers

1/4 cup sugar
6 TBSP melted Earth Balance dairy free butter

1. Preheat your oven to 350 degrees Fahrenheit.
Finely crush the graham crackers in a food processor or with a rolling pin.
2. In a medium bowl combine and mix the graham crackers, sugar, and melted butter.
3. Press the mixture into the bottom and sides of a 9-inch pie dish using a spoon or the bottom of a measuring cup to get a flat, even surface.
4. Bake the crust for 5-10 minutes until a light golden brown. Check constantly so you don't burn the crust.
For the pie filling:
1 cup + 2/3 cups almond milk OR any other dairy free substitute
1/2 cup sugar, divided in half
4 egg yolks
2 tsp vanilla extract
3 TBSP cornstarch
2 TBSP softened Earth Balance dairy free butter
1/4 cup lime juice
1 TBSP lime zest (1 lime gives about 1 TBSP of zest.)
1. In a medium sauce pan pour the milk and half of the sugar (1/4 cup) and bring to a boil. Reduce the heat to medium.
2. Keep the milk at a low simmer. In a bowl, whisk the egg yolks together. Add the remaining half of the sugar (1/4 cup) and the cornstarch.
3. Add 1/2 to 1 cup of the simmering milk to the egg mixture. Mix to temper the eggs before adding the egg mixture to the pan. Continue to whisk until the custard thickens, about 3-5 minutes. Custard needs to be cooked to 185 degrees Fahrenheit in order for it to become thick and not watery in the fridge.
4. Turn off the heat, but leave the pan on the burner and add the butter.
5. Remove from heat and add vanilla, lime juice. You can strain the custard to get rid of any lumps, but you don't have to. Add the lime zest after straining if you do so.
6. Transfer to the pie dish and cover with plastic wrap before cooling in the fridge.
Serve with dairy free whipping cream or coco whip.

(Coco whip is ready to serve, but will probably need to be thawed a couple minutes before topping the pie. Silk dairy free heavy whipping cream will need to be whipped before hand.)
