All you need is a cooking pot, a cutting board, a knife, a mixing spoon/ladle, and the ingredients of course!

  • 3 TBSP cooking oil

  • 1/2 cup butter

My preference is olive oil because of how bad canola oil is for you.

  • 1 onion

  • 1 leek

  • 4 carrots

  • salt

  • pepper

  • 4 potatoes

  • 1 (16 0z) can of corn

  • 1 (12 oz) bag of frozen peas

  • mushrooms (about 10/8 oz)

I didn't add any kind of meat but realized that ham would be PERFECT in this so if you have ham or bacon lying around, grab it. You can add chicken, sausage, or ground beef in this soup, whichever is your preference! Add all of them if you're a meat enthusiast! I might do so next time!

Here are the steps:

Step 1:

Pour about 3 tablespoons of oil in your cooking pot and heat it on low.

Step 2:

Chop up your onion and sploosh that into the pan, (not literally, of course. No one wants an oil burn.)

Step 3:

Get your mushrooms and chop those up, adding them into the onions and oil.

Step 4:

Heat up your pan to medium and place your butter stick into the middle of the pan to melt it.

Step 5:

Next, chop up your leek. (I've added a video below to show how because I had to call my mom to learn exactly how to chop it.) Once chopped and rinsed, plop that into the pan and mix into the onions and mushrooms.

Step 6:

Rinse your carrots and cut the ends off before slicing each one, adding that into your pan.

Step 7:

Add in two cups of water or meat broth.

Step 8:

Add in at least 1 teaspoon of salt and pepper.

Step 9:

Rinse your potatoes and slice the ends and four sides of skin off. Then cut in half and chop each half into several pieces. Plop those into the pan and add two more cups of water.

Step 10:

Start a timer for 10 minutes and cover the pot with a lid. Doom scroll for a couple minutes and check a couple times sliding a fork or toothpick into the potatoes to check how soft they are. Once their soft, take a few pieces out and mash them up before adding them back in.

Step 11:

Dash some more salt and pepper on their and mix in the peas and corn.

Step 12:

Simmer on low and serve hot with cheese or bacon. Yum Yum!!
