I know that most people would say banana is not a great flavor. I would have to agree! Banana is not a delicious flavor in things, BUT only in processed foods such as gummies, chocolate, any kind of candy. The fresh, homemade, and real flavor is the most amazing thing. Ever since I was a child my mom would make banana bread. As I grew up I was able to eventually join her in baking it.

It's super easy and you can add what you'd like to it, whether you like nuts, coconut shavings, chocolate chips. I, of course, added chocolate chips because chocolate plus bananas is a very delicious dance on the tongue.

- 3-4 medium, overripe bananas

- 3/4 cup sugar

- 1 egg

- 1 tsp vanilla

- 1/4 cup Coconut

- 1 1/2 cups gluten-free all purpose flour

- 1 1/4 tsp baking powder

- 1/2 tsp. baking soda

- dash of ground cinnamon

- 1/8 tsp salt

- 1 cup chocolate chips + additional for toppings

Directions:

1. Preheat the oven to 350ºF. Prepare a 9x5 loaf baking pan by lining it with parchment or foil and lightly spraying nonstick spray.

2. Mash the bananas with a fork or whisk. Whisk in the sugar, egg, vanilla, and vegetable oil.

3. Mix in the flour, baking powder, baking soda, cinnamon, and salt. The batter will be lumpy.

4. Fold in the chocolate chips.

5. Pour the batter into the prepared baking pan (top with more chocolate chips if you want). Bake for 35-45minutes (start checking for doneness with a toothpick at 35 minutes). Let cool.
