My family never seems to be rid of oatmeal cookies. My father loves oatmeal raisin cookies. (Personally I could live without the raisins.) My mother loves the really healthy, nutty, no-bake oatmeal cookies that are more like bars. My siblings will eat whatever is baked because it's just too good to pass up. Oatmeal cookies are delicious!

It's alright if you disagree. If you have friends who love a good oatmeal cookie for a treat here's a recipe to try. Remember, it's gluten-free and dairy-free.

Preheat oven to 350 degrees

  • 1/2 cup brown sugar, firmly packed

  • 1/2 cup white granulated sugar

  • 1/2 cup earth balance Original Buttery Spread

  • 1 egg

  • 1 tsp vanilla extract

  • 1 TBSP unsweetened almond milk

  • 1 1/4 cup Great Value All-purpose flour, gluten-free

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup oats (rolled or quick, either will work just fine)

  • 1/2 cup mini dark chocolate chips (bought @Winco)

  • 1 tsp grated orange rind (or more if you're like me and you love the taste and smell and everything about oranges)

  1. Cream the sugars with the butter.

  2. Combine with the egg, vanilla and milk until smooth, scrape sides if needed. (I always use a handheld electric mixer.)

  3. Sift together the dry ingredients: flour, soda, powder, and salt. Combine with the wet ingredients until smooth.

  4. Mix in the oats with a wooden spoon or rubber spatula.

  5. Mix in chocolate chips or your preferred add-ins.

  6. The dough should be thick enough for you to roll into tablespoon sized balls. If not, don't worry, just add a tablespoon of flour until it gets to that point. (More flour will help the cookies rise. Less will flatten them. As seen below⤵️

(The left are more flat and the right are more full.)

7. Grease a cookie baking sheet. (I always use a sheet of wax paper to ease my worry of the cookies sticking to the pan.)

8. Place cookies in 4 rows of 3. Bake for 10 minutes. When done, let them sit and cool for five minutes and then enjoy!

Happy Cooking!
