Everyone knows there are delicious frozen fried tater tots that you can buy at the grocery store. To save yourself some gas and money, make these amazing replicate tater tots.
Ingredients:
2.5 lbs russet potatoes
1/4 tsp salt
dash of black pepper
dash of cayenne pepper
dash of paprika
1/4 tsp dill weed
1/2 cup coconut oil, divided
Instructions:
Wash the potatoes and place in a large pot filled with water the covers the potatoes. Bring to a boil with a lid for 20-25 minutes, or until soft enough to stick a fork in smoothly.
Pour the hot water out carefully and fill pot with cold water. Dump that water out next because it'll be warm. You'll want to repeat this process until you can put your hand in the water safely and hold the potatoes.
Peel potatoes and cut into large pieces. Place half of the potatoes in a food processor and blend until thick. It was be very goopy, but that's normal because of the potatoe starch.
Scoop out the potatoes and mix the seasonings with it.
Heat Coconut oil in a large skillet on medium heat and start rolling your tots. Test the oil by putting a small piece of batter in. If it starts sizzling, it's ready.
Roll into teaspoon sized balls and flatten slightly in your palm. Using brown rice flour on your hands will help with the stickiness.
Set in the oil and let it sizzle for a couple minutes. Flip onto the other side when golden brown and cook for a couple minutes. Lay paper towels on a plate and take the tots that are done cooking and put them on the paper towels.
You can save half of your dough in the freezer, just wrap it up with plastic wrap.
Enjoy with your choice of condiment.
